Botanas (Choice of Two) Uchepos: Sweet corn tamales drizzled with poblano cream sauce and melted chihuahua cheese. Empanadas de Camaron: Masa turnover filled with shrimp, tomato, onion, capers, and olives served with guacamole and salsa roja. Ceviche de Pescado: Lime marinated marlin fish tomato, onion, chile, serrano, cilantro, and olives. Calamar con esquites: Sauteed squid with ajillo sauce, roasted red peppers, arugula, and sweet corn esquites. Main course (Choice of One) Pescado en cream poblana: Roasted Tilapia in creamy poblano sauce served with white rice and grilled zucchini. Pescado Tikin Xic: Achiote marinated halibut baked in banana leaf served with molcajete-habanero salsa and garlic mashed potato. Pollo en Mole Negro: Roasted chicken breast served with a spicy, sweet dark 20 ingredient mole for a well rounded and earthy favor served with mashed potatoes. Cochinita Pibil: Slow cooked braised pork should in banana leaf with achiote, sour orange, and sweet spices served with pickled yucatean onions, black beans, and habanero sauce on the side.
